Strawberries in shredded chocolate with a green tea sauce

Ingredients
  • 300g de fromage blanc
  • 500g de fraises
  • 25g de miel
  • 1 gousse de vanille
  • 60g de crème fleurette
  • 60g de marmelade d’orange
  • 2g de maïzena
  • 4g de thé vert
  • 10g de sucre
  • 30g de chocolat noir 70%
Direction

To shred the chocolate, melt it at 35°C, in a saucepan water bath. Then pour it into a parchment paper piping cone with the tip cut off. Squeeze out filaments or place them on a cold, oiled bottle and peel off when hardened.

Green tea sauce:

Bring the cream, sugar and green tea to the boiling point, thickening with the starch, then pour it through a muslin strainer. Serve chilled. In a small saucepan, infuse the honey with the vanilla pod, after cutting it in half and extract the seed with the tip of a knife, heating very gently.

How to serve

Place the fromage blanc in the middle of a plate, with marmalade dotted all over it, then arrange the strawberries, pour the tea sauce around the edges, garnish with the shredded chocolate and drizzle with the vanilla-flavoured honey.
